Festivals and Traditions in Languedoc-Roussillon


		CARNIVALS In Limoux, the carnival is not so much a parade as a kind of dance, governed by rules handed down from father to son for the past 400 years. In Pézénas, the 'colt' is led through the streets by an attendant, dressed in red and white, and followed by musicians playing fifes and oboes.

THE FESTIVAL OF LOVERS
Every year, Roquemaure becomes the city of romantic legends. The town is decorated as it was in the 19th century to commemorate the arrival of St Valentine’s relics in 1868.

THE CASTELNAUDARY CASSOULET
This dish, prepared in yonder days for Sunday lunch, was a festive meal. It was in made in a "cassolo", a deep clay dish that gave its name to cassoulet.
